How to make easy homestyle meatloaf any day of the week. Here, a moist, tasty recipe topped with a sweet tangy glaze. Whatever's left, if anything, can be made into meatloaf sandwich the next day.

Ingredients
2 lb ground beef, 85% lean
1 1/4 cup dry bread crumbs
   (or stuffing mix, like Pepperidge Farm)
3/4 cup yellow onion, diced
1/2 cup celery, diced
3 large cloves garlic, crushed, minced
2 eggs, beaten
1/2 cup worcestershire sauce, original
1 tsp salt
1 tsp black pepper, fresh cracked
1/3 cup milk, whole
1 TBSP vegetable oil (for sautéing)

Glaze
3/4 cup ketchup
1/2 cup brown sugar
2 TBSP worcestershire sauce, original
1 TBSP distilled white vinegar
 
Directions
  1. Combine all ingredients for glaze. Mix well.
  2. Adjust oven rack to lower middle position. Preheat oven to 350° F.
  3. Using 1 TBSP oil, brown the onion, garlic, and celery in a sauté pan on medium high heat, stirring occassionally, about 5 minutes. Turn off heat.
  4. In a large mixing bowl, combine all ingredients for the meatloaf, including the browned onion-garlic-celery mix, and add 1/3 cup of the pre-mixed glaze. Mix quickly just to combine. Don't overwork the mixture or you'll get a compact loaf.
  5. Loosely form the mixture into a loaf-like shape and lightly press into a 9x5 loaf pan. Spread the remaining glaze evenly on top of meatloaf. Bake at 350° F for 1 hour.
  6. Optional: To brown the glaze, switch the oven to broil for 2 minutes. This part may get a little smoky. Make sure you have your fan turned on high. Or you may skip this step.
  7. Serve meatloaf hot. Goes great with mashed potatoes, peas and carrots. Enjoy!
